Cool Crisp and Healthy Cukes

One of my favorite things about summer is indulging in a cool and crisp snack after spending time outside in the heat. Cucumbers are the ultimate hydrating and refreshing veggie – plus, they contain antioxidants, Vitamin K, and they’re low in calories.

This recipe for cucumber salad is bursting with fresh flavor and a hearty crunch – the cucumber is mixed with radishes, fresh mint, and parsley.

It’s my go-to cooling dish for the hottest summer days – and the addition of apple cider vinegar gives it extra bite.

Here’s what you’ll need:

  • 2 cups organic English cucumber, cubed or sliced

  • 1 cup sliced radishes

  • 2 cups minced parsley

  • 1/2 cup grated carrot (optional)

  • 3 tbsp minced mint

  • 3 cloves minced garlic

  • 3 tbsp lemon juice

  • 2 tbsp Extra Virgin Olive Oil

  • 1/2 tsp Himalayan salt or Celtic sea salt
