This recipe for cucumber salad is bursting with fresh flavor and a hearty crunch – the cucumber is mixed with radishes, fresh mint, and parsley.
It’s my go-to cooling dish for the hottest summer days – and the addition of apple cider vinegar gives it extra bite.
Here’s what you’ll need:
2 cups organic English cucumber, cubed or sliced
1 cup sliced radishes
2 cups minced parsley
1/2 cup grated carrot (optional)
3 tbsp minced mint
3 cloves minced garlic
3 tbsp lemon juice
2 tbsp Extra Virgin Olive Oil
1/2 tsp Himalayan salt or Celtic sea salt
